Autumn Cooking

Mmm I say with zero hesitation that I absolutely love the tastes and smells of the autumn season! Every year our mom would make a fresh pot of apple cider and the delicious aroma of mulling spice would fill the house.  With the abundance of apples lying around my apartment I decided to recreate that yummy smell and make some homemade applesauce!

But oh it did not stop there ladies and gentlemen; I also made my some Almond PB Hot Chocolate and a Pumpkin Spice Steamer.  Perhaps I went a little bit overboard but hey, what else am I going to do on my weekend off?

Banana Cinnamon Applesauce

  • 8 Apples
  • 1 Large Banana
  • 1/3 cup Apple Juice
  • 2/3 cup Almond Milk
  • 2 Cinnamon Sticks
  • 1 teaspoon Cinnamon
  • ½ teaspoon Ginger
  • ½ teaspoon Pumpkin Pie Spice
  • ¼ teaspoon Ground Cloves
  • ¼ cup Crasins
  • *Sweetener (Optional)

Peel and dice the apples and place them in a large pan.  Mash half of the banana, dice the other half, and add to the pan.  Stir in apple juice, 1/3 cup of milk, cinnamon sticks, seasonings, and craisins.  Heat, covered over low heat for about 25 minutes.  Stir and lightly mash every so often and add the last 1/3 cup milk as the mixture thickens.  After cooking allow the apple sauce to cool with the lid on for about 8 minutes before removing and adding the optional sweetener.

*Depending on the ripeness of your banana you may not need the sweetener.  I personally thought it was fine without but if your looking for more of a dessert, sweeten away!

Peeling and chopping apples is definitely time consuming but it ends up being a labor of love when you get this yummy result ->

You can choose how chunky you want your applesauce as it cooks.  If you want it smoother mash up the apples more or you can transfer it to a food processor and puree. I like the texture difference though when the apples are less mashed!

Get ready to snuggle in front of the fire with a blanket after you make these next recipes because that’s where your feet will take you so they can match the comfort in your belly! You may also want to clear your schedule for a quick nap, just sayin.

Almond PB Hot Chocolate

Pumpkin Spice Steamer

  • 8 oz Almond Milk
  • 2 teaspoons Pumpkin
  • 1 teaspoon Maple Extract
  • ½ teaspoon Cinnamon
  • ¼ teaspoon Ginger
  • ¼ teaspoon Pumpkin Pie Spice
  • 1/8 teaspoon Ground Cloves
  • Dash of Nutmeg
  • Sweetener to taste

For both recipes, steam or heat up milk then combine with other ingredients. It’s as easy as that!
