We hope that you all enjoyed your Thanksgiving. Instead of driving to our Grandparents for the day, we decided to stay home and celebrate. Even though we did miss out on seeing our cousins and other relatives, it was nice not to have to drive anywhere.
We started the day with at ten-mile run (gotta burn those calories!) and then spent a lot of the day cooking together in the kitchen. We made the green bean casserole and ‘impossible pumpkin pie’ from FatFree Vegan Kitchen, our Quinoa Mushroom Stuffing, ‘Caulipots’ from Appetite for Reduction, and a spur-of-the-moment baked tofu dish. We also made a blueberry and an apple pie for the whiners who don’t care for pumpkin 😉 .
Unfortunately we don’t have a recipe for the tofu dish because we just threw things together, but basically it consisted of silken and super firm tofu (that my dad smoked in his smoker), mushrooms, nutritional yeast, rosemary, thyme, sage, garlic and leeks. It was similar in texture to a tofu Quiche but didn’t taste like it. We added not-chik’n bouillon to it and basted it with our Cranberry Persimmon Glaze which added a crisp texture to the outside.
Overall we had a great time and hope that you did too! It definitely went by fast and I’m sure that Christmas will be coming up just as fast. On Saturday my mom and I went shopping for new Christmas decorations and put them up around the house.
Our parents have always gotten a real Christmas tree that we would pick out from a tree farm and chop down ourselves. What do you do? Do you buy a real tree every year or do you have a fake one?
