Lemon Poppy Seed Breakfast Bake

What did you do yesterday? Oh nothing just climbed a tree with my sister! We decided it was about time to liberate a few out-of-reach apples from a local tree.  Man do I miss the good old days when climbing trees was not a rare occasion but a life style.  I don’t know about you but I lived in those things when I was younger!

But yesterday was all about celebrating another great year’s accomplishments for Charissa! It was her birthday, and for only turning 25 she has had an influence on the lives of so many people including my own; and for that I am so thankful.  I do love birthdays and the excitement surrounding them.  Especially when they belong to people who deserve to have their birth well, celebrated!  Having class I was not able to give her the celebration she deserves (which would be impossible!) but I did get to make her some yummy food =) including this awesome new breakfast bake;

Lemon Poppy Seed Breakfast Bake

Serves: 2

  • ½ cup Rolled Oats
  • ¼ cup Oat Flour
  • ¼ cup Quinoa Flakes
  • 1 teaspoon Baking Powder
  • 1 tablespoon Poppy Seeds
  • ¼ teaspoon Salt
  • 2/3 cup Almond Milk
  • 1 tablespoon Coffee
  • 1 teaspoon Lemon Extract
  • ½-1 teaspoon Almond Extract
  • Juice and Zest from ½ Lemon
  • 1 Banana Mushed
  • Liquid Stevia Drops to Taste
  • ½ cup Raspberries

Preheat oven to 400° F and lightly coat 2 mini loaf pans with cooking spray.  Mix together all dry ingredients and set aside. Now mix together all wet ingredients, mushed banana, and zest.  Gradually stir the dry ingredients into the wet and add the raspberries.  Pour evenly into the two pans and bake for 20-25 minutes.

We made a topping for the bake out of Chia Seeds, Yogurt, Sweetener, and Lemon Extract. We also put some Smart Balance on top which was very tasty!

I also made pumpkin butter from Oh She Glows and a Pumpkin-Chocolate Birthday Cake with Pumpkin Butter Cream Frosting (YUM!)  This cake’s inspiration came from Never Homemaker’s Rich Chocolate-Pumpkin Cake w/ Pumpkin Frosting.  I neglected to take measurements while making the cake so I plan on remaking it so everyone can enjoy Charissa’s birthday cake!  That recipe will hopefully be coming soon so stay tuned =P as for now here are some tempting pictures.  Keep in mind I have yet to buy a cake pan so I had to get creative and use two mini loaf pans hehe.

Notice the “It’s Your Birthday” plate. I got this a looonnngg time ago on my birthday and though the cake would have looked prettier on a black plate; I couldn’t pass up the opportunity to use this one! And no I definitely do not support eating at McDonalds haha

Yes this is a very small piece don't worry, we went back for seconds! In case if you are wondering those are craisins and drizzles of chocolate pb sauce on top!

We found the cake much tastier warmed up in the microwave!  The frosting melted and soaked into the cake making it super damp (we despise the word moist!)
